For a quick snack when your up during those middle of the night feedings, or to go along with your early morning coffee is Berry Oatmeal muffins. I love using blueberries in mine, but any berry works, and mixing and matching berries is fun too! This recipe is easy to double and freezes well! 1.5 cups flour 1 cup cooking oats 2 1/4 tsp baking powder 1 tsp salt 1/2 tsp ground cinnamon 3/4 cup sugar 2 large eggs 1/2 cup butter 1/2 cup cold milk 1 1/4 cup blueberries (or berries of choice) sanding sugar for topping (optional) *Preheat oven to 350 degrees. *Line a standard 12-cup muffin tin with baking cups. *In a medium bowl, whisk together flour, oats, baking powder, salt, and cinnamon. In a separate bowl, whisk together sugar, eggs, butter, and milk. Stir wet ingredients into dry ingredients, then stir in berries. *Divide batter evenly between muffin cups, approx 1/4 cup to each. Sprinkle with sanding sugar, if desired. *Bake until tops spring back when lightly touched, about 20 minutes. *Cool 5 minutes, then remove to wire rack to cool completely.
